NARIÑO
Nariño, and Taminango, are located in the vicinity of the Doña Juana volcano, which has added volcanic ash to the
ground and a low amount of organic material. Coffee is grown under dispersed shade trees. Nariño’s proximity to the Equator, the amount of sunny hours per day and the delta between day and night temperatures all create very particular conditions that make for a special sweetness in the cup.
This coffee represents 18 farms, which on average are each less than a hectare. The farmers all work together, picking
only perfectly ripe cherry by hand — a process likened to an extreme sport, given the steepness of the hills.
The wet-milling processes included 16 to 18 hours of fermentation, drying on patios and in a mechanical silo.
